Asian Chicken Linguine

What You'll Need
- 1 pound linguine
- 3 tablespoon sesame oil
- 1 1/2 pound boneless, skinless chicken breasts, cut into thin strips
- 3/4 pound fresh mushrooms, thinly sliced
- 3 cloves garlic, minced
- 3/4 teaspoon ground ginger
- 1/4 teaspoon cayenne pepper
- 1/3 cup hoisin sauce (see Tip)
- 1/4 cup soy sauce
- 3 scallions, sliced diagonally
What to Do
- In a soup pot, cook pasta according to package directions; drain, rinse, drain again; set aside.
- In the same pot over medium heat, heat oil until hot, but not smoking, then add chicken and sauté 5 to 6 minutes or until no pink remains, stirring constantly. Add mushrooms, garlic, ginger, and cayenne pepper; cook 5 minutes, stirring occasionally. Add hoisin sauce and soy sauce, then return pasta to the pot and toss until well coated. Cook 2 to 3 minutes or until pasta is heated through. Add sliced scallions, toss, and serve immediately.
