Here's an easy old-time chicken recipe that's found in almost every Italian kitchen. And, true to form, Its Italian delicious!
What You'll Need
- 2 eggs, well beaten
- 1/4 cup Italian-style seasoned bread crumbs
- 2 tablespoon grated parmesan cheese
- 4 boneless, skinless chicken breast halves
- 1/4 cup plus 1 tablespoon olive oil, divided
- 2 garlic cloves, minced
- 1 large onion, chopped
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/8 teaspoon crushed red pepper
What to Do
- Place beaten eggs in a shallow dish. In another shallow dish, combine the bread crumbs and Parmesan cheese.
- Dip the chicken breasts in egg, then in the bread crumb mixture. In a large skillet, heat the 1/4 cup olive oil over medium-high heat; add coated chicken and sauté for 6 to 8 minutes per side, or until the chicken is golden and no pink remains. Remove the chicken and place on a serving platter; keep warm.
- In the same skillet, heat the remaining 1 tablespoon olive oil: add the remaining ingredients and sauté until garlic and onion are golden. Top the chicken breasts with the garlic-onion mixture and serve.
