Chicken Pesto on the Rack

I used to think that you could make only basic foods like burgers and barbecued chicken on the grill, but now I know it works great for fancier foods, too! This recipe is perfect for company, or for a special family dinner.

What You'll Need

  • 6 boneless and skinless chicken breast halves
  • 1/2 cup bottled Pesto sauce
  • 6 slices mozzarella cheese
  • 1/3 cup sliced black olives (optional)

What to Do

  1. Preheat the grill to medium-high heat. Grill the chicken for 12 to 15 minutes or until no pink remains, turning halfway through the grilling.

  2. Spoon about 1 tablespoon Pesto evenly over the top of each piece of cooked chicken. Place a slice of mozzarella cheese over the Pesto sauce, close the grill cover, and continue cooking for 2 to 3 minutes, until the cheese is melted. Garnish with the black olives, if desired.


Notes

Pesto sauce is available in the supermarket produce or tomato sauce section.
