Chicken Rumaki

Rumaki used to be found only in Asian restaurants, but now I'm going to share a simple recipe with you, so that you can enjoy that unusual combination of flavors made right on your own grill.
What You'll Need
- 6 boneless, skinless chicken breast halves
- 12 bacon slices
- 3/4 cup ketchup
- 3/4 cup white vinegar
- 1 cup firmly packed brown sugar
What to Do
- Cut each of the chicken breast halves in half again lengthwise. Wrap 1 piece of bacon securely around each piece of chicken and secure with a toothpick.
- In a small saucepan, combine the ketchup, vinegar, and brown sugar, and bring to a boil on the stovetop. Remove from heat.
- Preheat the grill to medium-high heat, then place the bacon-wrapped chicken on the grill for 6 to 7 minutes per side, until the chicken is no longer pink and the bacon is crisp.
- Remove from the grill and serve topped with the brown sugar sauce.
Notes
If you want a bit more "zip", add an additional tablespoon or two of vinegar.
