A little lesser known than its darker counterpart, white barbecue sauce is tasty, tangy, and a guaranteed hit among your crew! This Chicken with White Barbecue Sauce is a new twist on an old favorite, and we promise, it's a show stopper.
What You'll Need
- 1 1/2 cup mayonnaise
- 1/3 cup apple cider vinegar
- 1/4 cup lemon juice
- 2 tablespoon sugar
- 2 tablespoon black pepper
- 2 tablespoon white wine Worcestershire sauce
- 4 chicken leg quarters
What to Do
-
Combine first 6 ingredients in a small bowl; stir well.
-
Place chicken in a large heavy-duty, zip-top plastic bag; pour 3/4 cup sauce over chicken, turning to coat. Seal bag, and marinate in refrigerator 8 hours, turning bag occasionally. Cover and chill remaining sauce.
-
Remove chicken, discarding marinade; arrange chicken in a 7- x 11-inch microwave-safe dish with skin side down and thicker portion of chicken toward outside of dish. Cover with wax paper, and microwave at HIGH setting 5 minutes; turn and rearrange chicken. Microwave an additional 5 to 6 minutes.
-
Preheat grill. Grill chicken, skin side up and uncovered, over medium-hot coals (350 degrees to 400 degrees) 15 to 20 minutes or until done, turning once and basting with half of reserved sauce (see Note). Serve with remaining reserved sauce.
Notes
Set aside some of the tangy white barbecue sauce before basting. Then serve it alongside the chicken. That way, there's no risk of the table sauce having any bacteria transferred via the basting brush!
