Simple Chicken Fricassee

Did you know that fricassee is the French term for a thick, chunky, stew-like dinner of browned chicken or meat that's simmered with vegetables? Our version delivers that great flavor and convenience in a one-dish meal - fast!
What You'll Need
- 1/4 cup all-purpose flour
- 6 skinned and boned chicken breasts
- 1/4 cup butter, divided
- 2 cups sliced fresh mushrooms
- 3 carrots, sliced
- 1 (1-ounce) envelope herb-with-lemon soup mix
- 1 cup half-and-half
- 1/2 cup water or white wine
- 2 teaspoons chicken bouillon granules or 2 chicken bouillon cubes
What to Do
- Place flour in a shallow dish; dredge chicken in flour. Melt 2 tablespoons butter in a large skillet over medium heat; brown chicken in butter. Remove from skillet, and set aside.
- Melt remaining 2 tablespoons butter in skillet. Add mushrooms and carrots; cook over medium heat, stirring constantly, 4 minutes or until tender.
- Combine soup mix and remaining ingredients in a medium bowl; pour over mushroom mixture. Bring to a boil, stirring constantly. Add chicken; reduce heat, and simmer 10 minutes or until chicken is done.

I have not made this yet, but when I do, I will be using "chicken base" instead of the bouillon cubes. This has a lot less sodium. The brand of "chicken base" that I use is "Better Than Bouillon". I get in from Amazon.
