Lemon Linguine with Chicken

What You'll Need
- 2 tablespoon butter
- 2 boneless, skinless chicken breasts
- 2 cup chicken broth
- 1 cup water
- 2 tablespoon fresh lemon juice
- 1/2 teaspoon lemon zest
- 1 tablespoon honey
- 1/4 teaspoon dried rosemary
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 pound linguine, uncooked
- Chopped fresh parsley, for garnish (optional)
What to Do
- In a soup pot over medium heat, melt butter. Add chicken and brown it 3 to 4 minutes on each side until no pink remains. Remove the chicken from the pot and set aside.
- Add remaining ingredients, except pasta, parsley, and chicken, and bring to a boil. Add pasta, then reduce the heat to low; cover and simmer 8 minutes or until pasta is tender, stirring occasionally.
- Meanwhile, cut the cooked chicken into strips and stir into the pasta mixture; cover and simmer 5 minutes or until heated through.
- Garnish with parsley and serve immediately.
