Lemon Linguine with Chicken

What You'll Need

  • 2 tablespoon butter
  • 2 boneless, skinless chicken breasts
  • 2 cup chicken broth
  • 1 cup water
  • 2 tablespoon fresh lemon juice
  • 1/2 teaspoon lemon zest
  • 1 tablespoon honey
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 pound linguine, uncooked
  • Chopped fresh parsley, for garnish (optional)

What to Do

  1. In a soup pot over medium heat, melt butter. Add chicken and brown it 3 to 4 minutes on each side until no pink remains.  Remove the chicken from the pot and set aside.
     
  2. Add remaining ingredients, except pasta, parsley, and chicken, and bring to a boil. Add pasta, then reduce the heat to low; cover and simmer 8 minutes or until pasta is tender, stirring occasionally. 
     
  3. Meanwhile, cut the cooked chicken into strips and stir into the pasta mixture; cover and simmer 5 minutes or until heated through.
     
  4. Garnish with parsley and serve immediately.
