Lime-Baked Walnut Chicken

Lots of Floridians have lime trees right in their own yards. (I have three of them!) This dish can make you feel like you do, too!
What You'll Need
- 1/2 cup all-purpose flour
- 1/2 cup finely chopped walnuts
- 1 teaspoon paprika
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- 3/4 teaspoon grated lime peel
- 1/2 teaspoon garlic powder
- 1/2 cup lime juice
- 1 (2-1/2- to 3-pound) chicken, cut into 8 pieces
- 1/4 cup vegetable oil
What to Do
- Preheat the oven to 350°F.
- Line a cookie sheet with foil and coat with nonstick vegetable spray; set aside.
- In a shallow dish, combine the flour, walnuts, paprika, salt, pepper, lime peel, and garlic powder. Place the lime juice in another shallow dish. Dip the chicken pieces in the juice, then coat with the walnut mixture, pressing it onto the chicken with the back of a spoon.
- Place the coated chicken in a single layer on the prepared cookie sheet; drizzle the oil over the top.
- Bake for 50 to 60 minutes or until the chicken is golden and no pink remains.
