Pecan-Breaded Chicken with Cranberry Sauce

Orange and honey-glazed chicken breasts with a crunchy pecan breading are a perfect match for cranberry sauce, indeed!
What You'll Need
- 2 chicken breasts, split, skinned, and boned
- 1/2 cup pecan pieces, finely chopped
- 1/3 cup seasoned bread crumbs
- 1 teaspoon grated orange peel
- 1/4 teaspoon salt
- 1/4 teaspoon paprika
- 1/4 cup honey
- 1 tablespoon orange juice
- 1 can (16 ounces) whole berry cranberry sauce
What to Do
- Preheat the oven to 350�F.
- Place the chicken in a shallow dish. In another shallow dish, mix together the pecans, bread crumbs, orange peel, salt, and paprika.
- In a small bowl, combine the honey and orange juice. Lightly spread the honey mixture over the chicken pieces; place the chicken in the crumb mixture, turning to coat on all sides. Arrange the chicken in a 9" x 13" baking dish that has been coated with nonstick vegetable spray.
- Bake for 35 to 45 minutes or until the chicken is fork tender and no pink remains. Top each serving with a small amount of cranberry sauce; serve with the remaining cranberry sauce.
