Peppered Raspberry Chicken

Very trendy, and gourmet-sounding, right? That means it's difficult, doesn't it? Wrong! You'll be absolutely blown away when you realize how simple our recipe is. Black pepper and raspberry jam come together to make a sweet and savory flavor combination that is sure to delight everyone, and to make you the talk of the town. After all, who but you could pull off a gourmet dish like this?
What You'll Need
- 4 whole chicken legs (thigh and drumstick attached)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoon butter, melted
- 1/2 cup seedless red raspberry jam
- 2 tablespoon balsamic vinegar
- 1 tablespoon soy sauce
- 1/4 teaspoon crushed red pepper
- fresh parsley sprigs to garnish
What to Do
- Preheat the oven to 375F.
- Place the chicken in a large broiler-proof baking pan. Sprinkle with salt and black pepper; drizzle butter over the chicken. Bake, basting occasionally, for 45 to 50 minutes, or until the chicken is golden.
- Meanwhile, in a small saucepan, mix together the jam, vinegar, soy sauce, and red pepper. Cook over medium heat until smooth, stirring occasionally.
- Spoon the sauce over the chicken; bake for 5 minutes more, or until the chicken is glazed and fork-tender. Heat the oven to broil, baste the chicken, and broil for 4 to 5 minutes or until the chicken is golden brown. Arrange the chicken on a platter and garnish with parsley.
