Remember Chicken

The aromas of some dishes often bring back happy memories like our Remember Chicken just might do. This easy chicken dish will certainly be a mealtime memory-maker for you any time you make it.
What You'll Need
- 1 (3- to 4-pound) chicken, cut into 8 pieces
- flour as needed (season with a little salt, pepper and paprika)
- 3 tablespoon butter
- 3 tablespoon vegetable oil
- 1/2 cup chopped onion
- 2 cans (15 ounces each) black-eyed peas
- 1/2 cup chicken broth
- 1/2 teaspoon dried oregano
- 1 medium tomato, chopped
What to Do
- Rinse chicken, pat dry with paper towels and coat with seasoned flour.
- In a Dutch oven, heat butter and oil; add chicken and cook slowly, until golden brown on both sides. Remove chicken and keep warm.
- Sauté onion in the Dutch oven until tender, about 5 minutes. Add black-eyed peas, chicken broth and oregano; bring to a boil. Arrange the chicken over the black-eyed pea mixture, pressing the chicken into the peas. Sprinkle tomato over the top; reduce heat and simmer covered for 35 to 40 minutes or until chicken is fork-tender and fully cooked.
Notes
For a different taste, try water or wine instead of the chicken broth. You can also use any canned beans: great Northern, cannellini, limas, etc. Substitute tarragon or thyme for the oregano.
