Smoky Chicken Salad

This is chicken salad - with a kick! This Smoky Chicken Salad is perfect between two slices of bread as a sandwich or as an appetizer.

What You'll Need

  • 2 pound (about 6 cups) cooked chicken, diced
  • 3/4 cup chopped celery
  • 2 to 3 scallions, chopped
  • 1/2 cup chopped parsley
  • 4 tablespoon lemon juice
  • 2 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1 large green apple, cored and chopped
  • 1 1/2 cup smoky barbecue sauce
  • 1 cup mayonnaise
  • 1 tablespoon hot pepper sauce

What to Do

  1. Mix together chicken, celery, scallions, parsley, lemon juice, vegetable oil, salt and apple in a large bowl. Cover, chill in refrigerator for anywhere from 10 minutes to overnight.
  2. When it's ready, combine barbecue sauce, maynnaise and hot pepper sauce in a separate bowl. Drain off any accumulated juices from chicken mixture then toss it in the barbecue mixture.
