South Philly Chicken Parmesan

What You'll Need
- 1/3 cup seasoned bread crumbs
- 3 chicken breasts, split, skinned, and boned
- 2 tablespoon olive oil, plus more as needed
- 1 jar (14 ounces) prepared spaghetti sauce (about 1-1/2 cups)
- 2 cup (8 ounces) shredded mozzarella cheese
- 2 tablespoon Parmesan cheese
What to Do
- Preheat the oven to 350F.
- Place the bread crumbs in a shallow dish. Coat the chicken evenly on both sides with the bread crumbs. In a large skillet, heat the oil over medium-high heat. Place the chicken in the skillet, 3 pieces at a time, and cook for 2 to 3 minutes per side, or until golden, adding more oil if needed.
- Pour half of the spaghetti sauce evenly into a 9" X 13" baking dish. Place the chicken in the baking dish and pour the remaining sauce over the chicken. Sprinkle with the mozzarella cheese, then the Parmesan cheese.
- Bake for 35 to 40 minutes, or until a fork can be inserted into the chicken with ease and no pink remains.
