Yiayia's Chicken

This chicken recipe is full of the old-world flavors that any Greek grandmother would serve at her house. Yiayia's Chicken is a recipe that takes us back to the days of old-fashioned cooking.
What You'll Need
- 1/4 cup olive oil
- 6 chicken thighs with skin
- 1 yellow onion, diced
- 1 (6-ounce) can tomato paste
- 6 cup water
- 2 cinnamon sticks
- 6 whole cloves
- 1 tablespoon salt
- 1 pound spaghetti
- 1/4 cup grated Romano cheese
What to Do
- In a soup pot over medium heat, heat oil just until smoking.
- Saute chicken thighs, skin side down, 5 minutes. Turn over and saute 5 more minutes. Remove chicken from pot and set aside.
- Add onions to the pot and saute about 5 minutes, or until translucent. Return chicken to the pot, along with tomato paste, water, cinnamon sticks, cloves, and salt; stir to blend completely. Turn heat to medium-low, cover, and cook 1-1/2 hours, stirring occasionally.
- Meanwhile, cook spaghetti according to package directions. Drain and serve with chicken and sauce. Sprinkle with Romano cheese.
