Sparkling Banana Punch

This one's often seen at outdoor wedding rehearsal dinners in the South. So gather 'round the punch bowl for good taste and good times!
What You'll Need
- 1 (6-ounce) can frozen orange juice concentrate, thawed
- 1 (6-ounce) can pineapple juice
- 1 tablespoon lemon juice
- 2 ripe bananas
- 1 cup sugar
- 2 cups water
- 2 liters ginger ale, chilled
What to Do

In a blender, blend orange juice concentrate, pineapple juice, lemon juice, bananas, and sugar on high speed until bananas are puréed and mixture is thoroughly blended. Add water and blend well.

Pour into a 9- x 13-inch baking dish, cover, and freeze 2 hours, or until mixture has frozen 1 inch in from sides of dish.

Remove from freezer and mix well, being sure to blend ice crystals with remaining mixture.

Just before serving, transfer to a punch bowl and add ginger ale, stirring carefully. Makes about 1 gallon.
Notes
This can also be made ahead of time by preparing the juice mixture and allowing it to freeze completely. Just remove it from the freezer 1 hour before serving and stir it to a slushy consistency. Combine with the ginger ale as above.
