Double Peanut Butter Cookies

Here's something for your kid's lunchboxes that you know won't be traded! Our homemade Double Peanut Butter Cookies will earn you a thumbs up from your pint-size brigade.
What You'll Need
- 1 1/2 cup all-purpose flour
- 1/2 cup sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup vegetable shortening
- 1 1/2 cup creamy or crunchy peanut butter, divided
- 1/2 cup light corn syrup
What to Do

In a bowl, combine flour, sugar, baking soda, and salt. Cut in shortening and 1/2 cup peanut butter (mixture will resemble coarse meal); add corn syrup, blending well.

Cover baking sheet with waxed paper. Form dough into rolls approximately 2" in diameter and place on waxed paper. Chill at least 1 hour.

Preheat oven to 350 degrees F.

Remove dough from baking sheet and discard waxed paper; coat baking sheet with cooking spray. Cut chilled dough into 1/4" slices and place slices on baking sheet. Place 1/2 teaspoon of peanut butter on each slice, then top with another slice of cookie dough, pressing down gently on the edges.

Bake 12 to 15 minutes. Cool before removing from baking sheet.
Notes
For crunchier cookies, substitute chunky peanut butter for the creamy.
