Lighter Chocolate Chip Cookies

What You'll Need

  • 2 1/3 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup packed brown sugar
  • 3/4 cup (1-1/2 sticks) margarine, softened
  • 1/2 cup granulated sugar
  • 1/2 cup egg substitute
  • 2 teaspoon vanilla extract
  • 1 1/4 cup semisweet mini chocolate chips

What to Do

  1. Preheat oven to 350 degrees F. In a medium bowl, combine flour and baking soda; set aside.
     
  2. In a large bowl with an electric mixer, beat brown sugar, margarine, and granulated sugar until well blended. Add egg substitute and vanilla, beating well. Gradually add flour mixture, beating well. Stir in chocolate chips.Drop dough by rounded tablespoonfuls onto ungreased baking sheets. 
     
  3. Bake 10 minutes, or until golden around edges. Let cool 5 minutes, then remove to wire racks to cool completely.
