These old-fashioned Sponge Cookies are so light and airy, you'll find that they go great with a mug of something warm or with your favorite side of fresh berries and cream. They're easy to make and loved by all!
What You'll Need
- 3 egg whites, well beaten
- 1/3 cup confectioners' sugar
- 2 egg yolks
- 1/2 teaspoon vanilla extract
- 1/3 cup all-purpose flour
- 1/2 teaspoon baking powder
What to Do

Preheat oven to 350 degrees F.

Place egg whites in a large bowl and beat until stiff; gradually add in sugar. In a small bowl, beat egg yolks until lemon colored, then add to egg-white mixture and continue beating. Add vanilla extract; beat again.

In another bowl, combine flour with baking powder, then fold into egg mixture.
- Cover cookie sheet(s) with waxed paper. Spoon mixture onto waxed paper, forming 3-inch-long finger-shaped cookies, and bake 8 to 10 minutes or until light golden. Cool slightly, then remove from pan with a spatula.
Notes
Sprinkle with confectioners' sugar or serve with fresh strawberries and whipped topping and you've got an easy, old-fashioned dessert.
