What You'll Need
- LIME VINAIGRETTE
- 1/4 cup vegetable oil
- 1/4 cup white vinegar
- 3 tablespoon lime juice
- 3 tablespoon sugar
- 1/4 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- __BLANK__
- 1 (16-ounce) package shredded cabbage
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 jalapeno pepper, thinly sliced (optional)
- 1/2 cup fresh cilantro, chopped
What to Do
- In a small bowl whisk together Lime Vinaigrette ingredients.
- In a large bowl, combine cabbage, red and yellow peppers, jalapeno pepper, if desired, and cilantro. Drizzle vinaigrette over vegetables and toss to coat.
- Serve immediately or refrigerate until ready to serve.
