Apricot Mango Fillets

No need to get out the tartar sauce or ketchup to top these fish fillets. That's 'cause I've spruced them up with a burst of fruit. Yeah...fruit!
What You'll Need
- 1 pound fresh or frozen white-fleshed fish fillets, such as cod, haddock, or whiting
- 1/2 teaspoon salt, divided
- 1 can (16 ounces) apricot halves, drained
- 1 tablespoon light brown sugar
- 1/4 teaspoon cayenne pepper
- 1 mango, peeled, pitted, and chopped
What to Do
- Preheat the broiler.
- Place the fish fillets on a broiler pan or rimmed baking sheet that has been coated with nonstick vegetable spray. Sprinkle evenly with 1/4 teaspoon salt and broil for 5 minutes.
- Meanwhile, in a blender, combine the remaining 1/4 teaspoon salt, the apricot halves, brown sugar, and cayenne pepper; blend on medium speed until a chunky purée forms. Pour the mixture into a small bowl and add the chopped mango; mix well. Spoon over the fish and broil for 4 to 6 more minutes, or until the fish flakes easily with a fork and the sauce is hot and bubbly. Serve immediately.
Notes
Papaya makes a good substitute for mango, but if no tropical fruits are available, 2 fresh peaches will work just as well.
