Always looking for a new way to jazz up fish? Well Cheesy Baked Fish is a tasty twist that adds homey comfort to mellow as can be catfish.
What You'll Need
- 6 catfish fillets, fresh or frozen
- 1 cup finely crushed cheese crackers
- 1/4 cup sesame seed
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1/2 cup (1 stick) butter or margarine, melted
- grated Parmesan cheese (optional)
What to Do
- Thaw fish fillets if frozen. Preheat oven to 400 °F.
- In a shallow bowl, combine cracker crumbs, sesame seed, parsley, salt and black and cayenne peppers.
- Dip fish fillets in melted butter, and then roll fillets in cracker-crumb mixture. Place fillets in a single layer in a baking dish that has been coated with nonstick vegetable spray and bake for 15 to 20 minutes, until golden. Serve topped with Parmesan cheese, if desired.
