Grilled Fish

If you've been looking for easy fish? This is it. Just two ingredients, couldn't be simpler.Try it on your barbecue grill (and yes, hinged grill baskets make it even easier!)
What You'll Need
- 10 1/2 pound white-fleshed fish fillets (cod, haddock or sole)
- 1/2 cup Italian salad dressing
What to Do
- In a large bowl, marinate fillets in salad dressing in refrigerator for 20 to 30 minutes. Preheat barbecue grill. Place marinate fillets in a hinged grill basket that's been coated with nonstick vegetable spray.
- Grill for about 10 minutes per inch-thickness of fish or until fish flakes easily with a fork.
Notes
Before grilling try sprinkling fish with Parmesan cheese. We prefer Italian dressing for the marinade, but almost any dressing will work. It can have a campfire taste even without any seasoning. Mesquite and hickory-flavored charcoals, wood chips and lava rocks have built-in flavor?with no mess. To make indoors in your broiler, preheat your broiler and brush the broiler pan or baking dish with oil. Place the fish about 4 inches from the broiler unit and broil for about 10 minutes per inch-thickness of fish.
