Key West Fillets

Here's a fish recipe that'll perk up their taste buds and have them clamoring for more, because this is how tastily they enjoy it in the Florida Keys.
What You'll Need
- 1/4 cup (1/2 stick) butter or margarine
- 2/3 cup crushed saltine crackers
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1 pound fish fillets
- 2 tablespoon fresh lime juice
What to Do
- Preheat oven to 350 °F. Melt butter in a 9 x 13-inch baking pan in the oven. Meanwhile, in a shallow dish, combine cracker crumbs, Parmesan cheese, Italian seasoning, salt, and garlic powder.
- Dip fillets in melted butter, then in cracker-crumb mixture. Arrange fish in a single layer in the baking pan, sprinkle with lime juice and bake for about 20 minutes, until fish is tender and flakes easily with a fork.
Notes
In Key West, the fish fillets would naturally be grouper, but any fish fillets will work - white or pink or dark. Try sole, flounder or whatever you like best.
