Lemon Fillets

This is about as easy as fish can be, but it tastes gourmet-fussed. We like to dab the fish with a touch of mustard or a sprinkle of garlic powder and sometimes some Cajun or Tex-Mex seasoning, but you don't have to.
What You'll Need
- 4 tablespoon (1/4 cup) butter
- 1/2 teaspoon dried dillweed
- 1/2 teaspoon dried thyme
- 1 scallion, thinly sliced
- 1 tablespoon lemon juice
- 4 white-fleshed fish fillets
- Lemon slices for garnish
- 4 tablespoon (1/4 cup) butter
What to Do
- In a large skillet, melt the butter and stir in the dillweed, thyme, scallion, and lemon juice. Add the fish fillets and cook for 4 to 5 minutes, or until fish flakes easily when tested with a fork.
- Put fish on a serving platter and pour butter sauce from skillet over the fillets Garnish with lemon slices.
Notes
Any kind of fish fillets will work. Try haddock, bluefish, flounder, or grouper.
