Short and Simple Pesto Fish

This should get your attention: only three ingredients! And it's what I call a restaurant-fancy meal without the hefty price tag. Hooray!
What You'll Need
- 2 (15-ounce) cans sliced potatoes, drained
- 1 (7-ounce) container prepared pesto
- 4 flounder fillets (about 1½ pounds total)
What to Do
- Preheat the oven to 350 degree F. In a medium-sized bowl, combine the potatoes and half of the pesto sauce; toss until evenly coated.
- Place the mixture in a 9" x 13" baking dish that has been coated with nonstick cooking spray. Place the flounder over the potatoes and spread the remaining pesto sauce evenly over the fish, covering completely.
- Bake for 15 to 20 minutes, or until the fish flakes easily with a fork. Serve immediately.
Notes
Since flounder fillets vary in thickness, you may get more than 4 fillets when buying 11/2 pounds. Make sure to adjust the cooking time according to the thickness of the fish. Watch it carefully and allow the fish to cook until it flakes easily with a fork.
