Swordfish Scampi

Swordfish Scampi is a simple, buttery delight. This terrific dish is great for a quick dinner or for company.
What You'll Need
- 1/2 stick butter, melted
- 1 teaspoon minced garlic
- 1 tablespoon lemon juice
- 1 pound -1/4 to 1-1/2 pounds fresh or frozen swordfish steaks, thawed if frozen (see Options)
What to Do
- Spray the cold grill racks with nonstick cooking spray. Preheat the grill to medium-high heat.
- In a small bowl, combine the melted butter, garlic, and lemon juice; mix well.
- Rinse the fish with cold water and pat dry with a paper towel. Brush the butter mixture on the fish and grill for 10 to 12 minutes, or until cooked through, turning the fish over occasionally and brushing it with the butter mixture each time.
Options
You can use any steak-type fish such as halibut or salmon for this recipe in place of swordfish. Whichever one you choose, do what I do and give it an extra squeeze of lemon while it’s on the grill.
