Curried Fruit

Hand me my sunglasses 'cause this fruit is bursting with bright color...and taste. It's the best go-along for poultry of any kind!
What You'll Need
- 1 cup firmly-packed light brown sugar
- 1/2 cup (1 stick) butter
- 1 tablespoon curry powder
- 2 (15-ounce) cans pear halves, drained
- 1 (29-ounce) can peach halves, drained
- 1 (20-ounce) can pineapple slices, drained
- 1 (15-ounce) can apricot halves, drained
- 1 (6-ounce) jar maraschino cherries, drained
What to Do
- Preheat the oven to 325 degree F. In a medium-sized saucepan, combine the brown sugar, butter, and curry powder over medium heat until the butter is melted and the sugar is dissolved, stirring constantly.
- In a 9" x 13" baking dish, combine the remaining ingredients; mix well.
- Pour the brown sugar mixture over the fruit and bake for 55 to 60 minutes, or until hot and bubbly. Serve immediately.
Notes
Either cold or slightly warm, leftovers make a great ice cream topping!
