Microwave Maple "Baked" Apples

This combination of apples and maple syrup makes me think of autumn in Vermont.
What You'll Need
- 5 red baking apples, cored
- 1 cup apple cider or juice
- 5 tablespoons maple syrup
- ground cinnamon for topping
What to Do
- Remove a small spiral peel from the top of each apple with a paring knife. Place the apples in a microwaveable casserole dish, leaving space between them. Pour the apple cider over and around the apples.
- Drizzle about 1 tablespoon of syrup over each apple, then dust lightly with cinnamon.
- Cover tightly and microwave on high for 5 minutes, then turn the casserole dish and microwave on high for 5 minutes more, or until fork tender.
Notes
Serve with a dollop of vanilla yogurt, ice cream, or whipped topping, if desired. Decorate topped apples for holiday fun!
