Pineapple Bake

Looking for something different to serve with your entrees? Try this easy side dish. It goes great with ham, pork, chicken, or turkey.
What You'll Need
- 2 (20 ounce) cans sliced pineapple in juice, undrained
- 2 cups (8 ounces) shredded sharp Cheddar cheese
- 2/3 cup sugar
- 1/3 cup all-purpose flour
- 1 cup round buttery cracker crumbs (about 33 crackers)
- 1/4 cup butter, melted
What to Do
- Preheat the oven to 350 degrees. Drain sliced pineapple, reserving 1/3 cup juice. Place pineapple in a lightly greased 7- x 11-inch baking dish; sprinkle with cheese.
- Combine reserved pineapple juice, sugar, and flour; pour over cheese. Combine cracker crumbs and butter, and sprinkle over flour mixture.
- Bake 25 minutes or until bubbly.

Made this last year at Easter as a dish to contribute. Was a big hit! So repeating again this yr. Was good enough eat as a side dish or a little bit of dessert.

I've been making this for a couple of years now but have used the pineapple chunks instead of slices. It is a wonderful go-along with ham and sometimes we even eat it as dessert. Since my husband is diabetic I make it with Splenda and it works just fine.
