Spiced Pineapple

The secret here is the red-hot candies. Yup, that's what gives this condiment its special flavor!
What You'll Need
- 1 (20-ounce) can pineapple chunks in heavy syrup, drained, syrup reserved
- 1 cup water
- 3/4 cup white vinegar
- 1/4 cup red-hot cinnamon candies
- 6 whole cloves
What to Do
- In a large saucepan, bring the reserved pineapple syrup, the water, vinegar, cinnamon candies, and cloves to a boil over high heat. Allow to boil until the cinnamon candies melt, stirring constantly.
- Add the pineapple and return to a boil. Allow to boil for 25 to 30 minutes, or until the pineapple is slightly transparent and most of the liquid has cooked away, stirring occasionally. Remove from the heat and allow to cool completely.
- Store in an airtight container and chill for at least 4 hours before serving.
Makes about 1 cup.
