Garlicky Mustard Lamb Chops

Garlic and mustard... bam... burst of flavor! You'll be amazed how much the garlicky mustard rub really enhances the flavor of the lamb chops.
What You'll Need
- 2 cloves, garlic, minced
- 1/2 teaspoon pepper
- 1/4 teaspoon dried thyme
- 1/8 teaspoon salt
- 2 teaspoon lemon juice
- 2 teaspoon Dijon mustard
- 1 teaspoon olive oil
- 4 (5-ounce) lean lamb loin chops
What to Do
- Preheat the broiler. Combine garlic, pepper, thyme, and salt in a small bowl; mash with back of a spoon until mixture forms a paste. Stir in lemon juice, mustard, and olive oil.
- Trim fat from lamb chops. Spread garlic mixture over both sides of chops. Place chops on a lightly greased rack in a broiler pan. Broil 6 to 7 minutes on each side or to desired degree of doneness.
Notes
This rub will enhance pork chops just as well. Substitute 4 (5-ounce) pork chops for the lamb, if desired.
