Microwave Roast Beef "Crepes"

When we think of crepes, we usually think of dessert crepes filled with luscious berries and other sweet fillings. How about putting a whole new spin on the traditional style of crepes? Give it a try!
What You'll Need
- 2 cups warm prepared mashed potatoes
- 1 (15-ounce) can mixed vegetables, drained
- 8 thick slices deli-style roast beef (about 1-1/4 pounds)
- 1 (12-ounce) jar beef gravy
- 1/2 cup water
What to Do
- In a medium bowl, combine the mashed potatoes and mixed vegetables; mix well.
- Place an equal amount of the mixture at one end of each roast beef slice; roll up crepe-style. Place seam side down in a microwave-safe 9" x 13" baking dish.
- In a small bowl, combine the gravy and water; pour evenly over the "crepes."
- Cover and microwave at 80% power for 6 to 8 minutes. Serve with the gravy spooned over the "crepes."
Notes
For quick microwave mashed potatoes, combine the water, milk, butter, and salt in a microwave-safe bowl according to the package directions for instant mashed potato flakes. Stir in the potato flakes then use the potatoes as directed above.
