Get your morning off to a healthy start with our Waffle Breakfast Stack. This all-in-one breakfast recipe is extra-quick and easy, thanks to the convenience of frozen and refrigerated shortcuts. It's just as good on a day when you're rushing out the door, as well as for a morning when you're just lazing around the house!
What You'll Need
- 4 refrigerated, full cooked turkey sausage patties
- 3 tablespoon butter
- 1 cup fresh spinach
- 4 frozen whole wheat waffles
- 5 eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tomato, sliced
- 1/4 cup shredded mozzarella cheese
What to Do
- In a large skillet over medium heat, cook sausage, covered, 6 to 8 minutes or until browned and heated through, turning once halfway through cooking. Remove to a plate and cover to keep warm.
- In the same skillet over medium heat, melt butter. Add spinach and cook 1 minute or until spinach is wilted. Meanwhile, toast waffles according to package directions.
- In a medium bowl, whisk together eggs, salt, and pepper; add to spinach mixture. Stir occasionally, until eggs are set.
- Top waffles evenly with tomato, scrambled eggs, sausage patty, and cheese. Serve immediately.
