Apple Raisin Tarts

Serve our Apple Raisin Tarts chilled along with a scoop of vanilla ice cream, for some wholesome homemade comfort. This is an easy dessert that fits a busy weeknight as much as it's a welcome company treat.
What You'll Need
- 2 tablespoons butter
- 1 can (20 ounces) sliced apples, drained (see Note)
- 1/2 cup packed light brown sugar
- 1/4 cup golden raisins
- 3/4 teaspoon ground cinnamon, divided
- 6 single-serve graham cracker tart shells
- 1/2 cup heavy cream
- 1 tablespoon granulated sugar
What to Do
- Melt the butter in a large skillet over medium heat. Add the apples, brown sugar, raisins, and 1/2 teaspoon cinnamon and cook for 2 to 4 minutes, or until the sugar is melted and the sauce is thick.
- Spoon into the tart shells; cover and chill for at least 2 hours.
- In a small bowl, beat the heavy cream, granulated sugar, and the remaining 1/4 teaspoon cinnamon until stiff peaks form. Spoon over the tarts and serve, or cover loosely and keep chilled until ready to serve.
Notes
This can also be made with fresh apples. Simply peel and thinly slice 2 to 3 apples then cook in the brown sugar mixture until tender.
