Apricot Macadamia Snowballs

What You'll Need
- 6 ounce dried apricots
- 1 cup macadamia nuts
- 1/4 cup apricot jam
- 1/2 cup flaked coconut
- 1 tablespoon sugar
What to Do
- In a food processor, blend the apricots, jam, sugar, and nuts, pulsing the motor until the mixture forms a mass.
- Form rounded teaspoonfuls of the mixture into 1 inch balls; roll each ball in the coconut until well coated. Refrigerate for 1 hour.
Makes 2 dozen.
Notes
If you prefer a nuttier flavor, you can toast the coconut before using it. Just spread it out on a cookie sheet and place the sheet in a 300 degree F. oven for about 5 minutes, or until lightly browned.
