Caramel Covered Pears

We've all seen those fancy chocolate-dipped apples loaded with nuts and caramel topping. In fact, I bet many of you have given them as fancy gifts. There's one problem - we pay those fancy prices! So why not try this easy variation at home, only this time with pears. They're just as tasty and just as fancy-looking, but a whole lot easier on our pocketbooks.
What You'll Need
- 1 package (14 ounces) caramels, unwrapped
- 1 tablespoon water
- 4 ripe pears with stems
- 1 cup (6 ounces) semisweet chocolate chips
- 1 cup finely chopped dry-roasted peanuts
What to Do
- Line a rimmed baking sheet with waxed paper and coat with cooking spray.
- In a medium saucepan, combine the caramels and water over low heat until melted and smooth, stirring constantly. Remove from the heat.
- Holding each pear by its stem over the saucepan, spoon the caramel mixture over it, coating completely. Place the coated pears on the baking sheet and chill for 1 hour.
- Melt the chocolate chips and spoon the chocolate over the caramel-covered pears then immediately sprinkle with the nuts.
- Chill for about 30 minutes, or until set. Serve, or cover and keep chilled until ready to serve.
Notes
NOTE: Wrap each pear in clear cellophane paper and tie with a ribbon. Place them in a basket for a fruit basket that won't soon be forgotten!
