Chocolate Almond Apricots

Boxes of chocolate-dipped dried fruits are pretty popular holiday gifts, and what better way to show how much you care than to make some yourself? These are better than all the rest 'cause they're dipped in a perfect combination of chocolate and caramel. You might even want to use an assortment of fruit to make this an extra-special gift.
What You'll Need
- 1 (6 ounces) package chocolate-covered caramels like Riesen Chocolate Chew
- 1 tablespoon water
- 3/4 cup chopped almonds, lightly toasted
- 1 (12 ounces) package dried apricots
What to Do
- Line rimmed baking sheet with waxed paper.
- In small saucepan, combine chocolate-covered caramels and water over low heat until melted and smooth, stirring frequently.
- Place toasted almonds in small bowl. Dip each apricot halfway into chocolate mixture then into the toasted almonds.
- Place on baking sheet and chill 5 to 10 minutes, or until firm. Store in airtight container in a cool, dry place. Do not refrigerate.
