What You'll Need

  • 2 cup milk
  • 3 eggs
  • 1 cup sweetened flaked coconut, plus 2 tablespoons toasted for garnish
  • 1/2 cup sugar
  • 5 tablespoon all-purpose flour
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1 (14-ounce) package coconut cookies
  • 1 (12-ounce) container frozen whipped topping, thawed

What to Do

  1. In a medium saucepan, whisk together milk, eggs, 1 cup coconut, sugar, flour, butter, vanilla, and salt. Cook over medium heat 5 to 7 minutes, or until thickened. Let cool.
  2. Layer the bottom of a dessert bowl with half the cookies, half the pudding, and half the whipped topping. Repeat layers. Sprinkle with toasted coconut. Cover and refrigerate until ready to serve.
