What You'll Need
- 2 large eggs, lightly beaten
- 1 cup chopped pecans
- 3/4 cup packed brown sugar
- 2 tablespoon butter, melted
- 1 teaspoon vanilla extract
- Pinch of salt
- 8 (2-inch) unbaked tart shells
What to Do
- Preheat the oven to 425 degrees. Combine first 6 ingredients in a medium bowl.
- Spoon pecan mixture into tart shells. Place filled shells on a baking sheet. Bake 16 to 18 minutes of until filling is set. Cool completely on a wire rack.
Notes
For a special touch, top them with whipped cream and pecan halves.
