Fruit Foldovers

What You'll Need
- 2 cup all-purpose flour
- 3/4 cup granulated sugar
- 1/4 teaspoon salt
- 2 tablespoon baking powder
- 2 eggs
- 1/4 cup vegetable oil
- 1/4 cup milk
- 1/2 teaspoon vanilla extract
- 1 cup prune butter
- 1/4 cup chopped walnuts
- 1/4 cup grape jelly
- 1 jar (6 ounces) maraschino cherries, chopped
- 1/2 cup confectioners' sugar
- 1 teaspoon butter, melted
- 1 1/2 tablespoon milk
What to Do
- Preheat the oven to 350 degree F.
- In a large bowl, combine the flour, granulated sugar, salt, and baking powder. Add the eggs, oil, 1/4 cup milk, and vanilla; mix well and set aside.
- In a medium-sized bowl, combine the fruit filling ingredients: the prune butter, chopped walnuts, grape jelly, and maraschino cherries; set aside. Knead the prepared dough, adding flour if needed.
- Divide the dough into fourths. Roll each fourth into a rectangular shape to about a 1/2-inch thickness.
- Spread 1/4 of the filling lengthwise along the center of each of the flour rectangles. Fold the sides and ends over the filling to form a loaf. Place the folded sides down on greased cookie sheets. Bake for 15 to 20 minutes or until golden. Cool.
- In a small bowl, combine all the topping ingredients: the confectioners' sugar, butter, and 1-1/2 tablespoons milk. Mix well, drizzle over the fruit loaves, and cut into 1-1/2-inch slices.
Makes 4 loaves, 10 to 12 servings per loaf.
