Lemon Squares

For light, lemony flavor that lingers . . . these are the best. (One of my most-requested recipes!)
What You'll Need
- 2 cup all-purpose flour
- 1/2 cup confectioners' sugar
- 1/2 pound (2 sticks) butter, softened
- 1 teaspoon lemon rind
- 4 eggs, well beaten
- 2 cup granulated sugar
- 3 tablespoon all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 cup lemon juice
- 1 tablespoon lemon rind
- 1 tablespoon confectioners' sugar for topping
What to Do
- Preheat the oven to 350°F.
- In a large bowl, mix together the 2 cups flour with the 1/2 cup confectioners' sugar. Cut in the butter, working it in well with a fork, stir in the 1 teaspoon lemon rind, then pat the mixture into a greased 9" x 13" baking pan to make a crust. Bake for about 20 minutes or until golden.
- Meanwhile, in another large bowl, combine all the Filling ingredients: the eggs, granulated sugar, 3 tablespoons all-purpose flour, baking powder, lemon juice, and 1 tablespoon lemon rind. Mix well, then pour onto the hot crust. Bake for another 20 minutes. Remove from the oven.
- Pour the remaining 1 tablespoon confectioners' sugar through a hand strainer over the baking pan, distributing it evenly over the top. Cut into squares while still warm. Refrigerate, then serve.
