Beefy Blue Salad

Need a meal in a pinch? Here's a well-balanced one. You'll get protein from the meat and calcium from the cheese with a mix of healthy veggies. Yummy and healthy all in one, sounds good to us.
What You'll Need
- 8 ounce thinly sliced roast beef
- 1 pint cherry tomatoes
- 1 (8-1/2-ounce) package mixed salad greens
- 1/4 cup (1 ounce) crumbled blue cheese (see note)
- 1/4 cup olive oil vinaigrette
- 4 Italian bread slices
- 1 tablespoon butter, melted
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon freshly ground pepper
What to Do
- Arrange roast beef slices into 2 stacks; roll up stacks. Cut into 1-inch slices.
- Arrange beef and tomatoes over salad greens. Sprinkle with blue cheese, and drizzle with olive oil vinaigrette.
- Meanwhile, preheat the broiler. Brush each bread slice evenly with butter. Sprinkle evenly with cheese and pepper. Place on a baking sheet.
- Broil 3-1/2-inches from heat 3 minutes or until light golden.
- Serve parmesan toasts with salad.
Notes
Equal amounts of crumbled feta cheese works just as well as blue cheese with this roast beef salad. Use whichever you like best.
