- 1/2 of a small red onion, thinly sliced
- 1/2 cup garbanzo beans (chick peas), rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 tablespoon red wine vinegar
- 2 tablespoon water
- 2 teaspoon vegetable oil
- 1 teaspoon basil leaves
- 1/4 teaspoon mustard powder
- 1/4 teaspoon salt
What to Do
-
In a large bowl, combine green beans, onion, chick peas, and cherry tomatoes.
-
In a medium-sized bowl, combine remaining ingredients, then pour over vegetables and toss. Chill.
Notes
There's no need to trim and blanch frozen green beans. If using them, just thaw, drain well, and combine with the onion slices, garbanzo beans, and cherry tomatoes as directed.
