Paella Salad

A little Spanish, a little Mexican...and a lot of taste!
What You'll Need
- 1 package (10 ounces) yellow rice
- 2 tablespoon red wine vinegar
- 1/3 cup vegetable oil
- 1/8 teaspoon dry mustard
- 1 large tomato, chopped
- 1/2 cup finely chopped onion
- 1/2 a medium-sized red bell pepper, chopped
- 1 1/2 teaspoon salt
- 1 package (10 ounces) frozen cooked shrimp, thawed
What to Do
- Cook the rice according to the package directions; set aside to cool.
- In a large bowl, combine the remaining ingredients except the shrimp; mix well.
- Add the cooled rice and shrimp; toss to coat well. Cover and chill for at least 2 hours before serving.
Notes
For additional color and flavor, add a thawed 10-ounce package of frozen peas to the salad when tossing.
