You want something quick and easy, but it has to be tasty and satisfying, too, right? If you're a fan of seafood and pasta salads, then give this crab salad a spin. You'll be crawling back for more!
What You'll Need
- 1 pound uncooked cheese tortellini (see Note)
- 1 pound imitation crabmeat, flaked
- 1 medium-sized red bell pepper, finely chopped
- 2 celery stalks, chopped
- 1 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- 1 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoon heavy cream
What to Do
- Cook the tortellini according to the package directions; drain, rinse, and drain again. Set aside and allow to cool in the colander.
- In a large bowl, combine the cooled tortellini and the remaining ingredients except the cream. Mix until thoroughly combined, then stir in the cream. Cover and chill for at least 2 hours before serving.
Notes
You can use fresh, frozen, or dried tortellini - or even use meat-filled tortellini for added flavor.
