What You'll Need
- 1 tablespoon vegetable oil
- 1/2 cup chopped celery
- 1/4 cup chopped onion
- 2 clove garlic, minced
- 7 cup chicken broth
- 1 (14-1/2-ounce) can diced tomatoes, undrained
- 1 1/2 cup frozen mixed vegetables
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup small shell pasta
What to Do
- In a soup pot over medium heat, heat oil. Add celery, onions, and garlic; cook 5 minutes, stirring occasionally. Add broth, diced tomatoes with liquid, mixed vegetables, Italian seasoning, salt, and pepper; bring to a boil.
