Fettuccine alla Vodka

Wait 'til you serve this rich, flavorful version of homemade Fettuccine alla Vodka! Nobody will believe you whipped it up yourself in minutes!

What You'll Need

  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1/4 cup vodka
  • 1 (28-ounce) can diced tomatoes, undrained
  • 1 (8-ounce) container mascarpone cheese
  • 2 tablespoon coarsely chopped fresh basil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 pound fettuccine

What to Do

  1. In a medium saucepan, heat oil over medium heat. Add garlic, and sauté 1 to 2 minutes, just until golden.
     
  2. Add vodka and tomatoes with their juice, and bring to a boil. Reduce heat to low and simmer 15 minutes.
     
  3. Add mascarpone cheese, basil, salt, and pepper; stir until thoroughly combined and cheese is melted.
     
  4. Meanwhile, in a soup pot, cook fettuccine according to package directions. Drain, return fettuccine to pot, and pour tomato and cheese mixture over it. Serve immediately.
