Penne with Tuna Sauce

Come on, you know what to do with this one! With a salad and some crusty bread, you'll have a dinner your family will love. It's like a romantic "fisherman's lunch" on the Italian coast.
What You'll Need
- 4 tablespoon olive oil
- 1 medium-sized onion, chopped
- 2 garlic cloves, crushed
- 6 anchovy fillets
- 1 can (28 ounces) whole tomatoes, broken up
- 2 cans (6 ounces each) tuna
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1 pound penne or ziti
- 4 tablespoon chopped fresh parsley
- 2 tablespoon butter
What to Do
- In a large skillet, heat the oil over medium-high heat; add the onion and sauté until transparent, about 5 minutes. Add the garlic and continue to cook until the onion starts to brown.
- Add the anchovies, crushing them with a spoon. Add the tomatoes; reduce the heat and simmer, covered, for about 15 minutes.
- Drain the tuna and break into large flakes; add to the tomato sauce. Add the salt and pepper. Simmer, uncovered, for 5 minutes. The juices will evaporate and the sauce will thicken.
- Meanwhile, in a large pot of boiling salted water, cook the pasta to desired doneness; drain and place in a large serving bowl. Pour the sauce over the pasta. Add the parsley and butter and toss. Serve immediately.
