Fruity Pork Loin

Wait till you try this change of pace from your usual savory pork roast. It's got a fruity flavor 'cause it's stuffed with fruit. Boy, will you love it.
What You'll Need
- 1 (2½ to 3-pound) center-cut single pork loin, well trimmed
- 12 dried pitted prunes
- 12 dried apricots
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 tablespoon apricot preserves
What to Do

Preheat oven to 350 degrees F. Coat a roasting rack and roasting pan with cooking spray.

With a long, thin knife, carefully make a horizontal slit through center of roast. Twist knife gently to make a 1/2-inch hole, making a "tunnel". Stuff prunes and apricots alternately into "tunnel". Place pork on rack. Sprinkle with salt and pepper; cover tightly with aluminum foil. Bake 1 hour, then remove from oven and uncover.

Spread apricot preserves evenly over top of roast. Return to oven and bake, uncovered, 15 to 20 minutes, or until no pink remains.

Remove pork to a cutting board and slice across grain. Serve immediately.
