Honey Dijon Pork Roast

Tangy Dijon-style mustard and a hint of honey sweetness make this pork loin roast a mouthwatering favorite! After enjoying it as a main dish, take advantage of any leftovers for hearty sandwiches!
What You'll Need
- 1/4 cup honey
- 2 tablespoon plus 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1 (2- to 2-1/4-pound) boneless center-cut single pork loin
What to Do

Preheat oven to 375 degrees F. Coat a medium roasting pan with cooking spray.

In a medium bowl, combine honey, mustard, and salt. Place pork in roasting pan and coat completely with mixture.

Cover pork with aluminum foil and roast 40 minutes. Uncover and baste with pan drippings.
- Roast pork an additional 15 to 20 minutes, or until no pink remains. Slice and serve with pan drippings.
Notes
Tip - Thinly sliced and topped with a little extra Dijon mustard, this roast makes super sandwiches.
